THIS EXCEPTIONAL BATCH COMES FROM THE HIGHLANDS OF SIDAMA, BENSA, AT AN ALTITUDE OF 2,442 M, WHERE PRODUCER TAMIRU TADESSE CULTIVATES COFFEES OF REMARKABLE QUALITY.

THE CHERRIES ARE HARVESTED AT FULL MATURITY AND THEN CAREFULLY SORTED TO ENSURE PERFECT HOMOGENEITY BEFORE ENTERING AN INNOVATIVE PROCESS: DARK ROOM WASHED.

UNLIKE THE TRADITIONAL WASHED PROCESS, THE PULPED CHERRIES DO NOT UNDERGO ANY CONVENTIONAL FERMENTATION. DRYING BEGINS SLOWLY IN THE SHADE ON RAISED BEDS UNTIL IT REACHES APPROXIMATELY 30% HUMIDITY.
